Our smoked salmon is Traditionally cured and smoked using an old family recipe.


Cured with our special recipe including dark rum and Demerara sugar our smoked salmon has a delicate and subtle flavour.  Its melt in the mouth quality, gentle aroma and wonderful colour make it unique and special.

The fish are smoked in our 30 foot brick kiln where they are imbued gently, over many hours, with the smoke from slow-burning oak chips, taken from venerable sherry casks which have been used to keep fine malt whiskies or on occasion a mix of this oak and Highland peat.
